Our restaurant “Brennstub” offers space for up to 100 guests and serves delicious traditional delicacies as well as dishes from the upscale local (Baden) cuisine with French touches.
Our restaurant is open to both our hotel guests as well as external guests.

Originally trained at the renowned Brenners Parkhotel Baden-Baden and having passed his master’s examination, Roland Müller took over the kitchen management at the Blume while still a junior chef.
Since then he keeps on spoiling our guests with dishes from the upscale Baden cuisine with classic French touches. His secret recipe: the very best ingredients from our own production with regional products. For our kitchen team, the love for the product is in the centre of everything they do.
When our head chef isn’t behind the stove, he trains our junior chefs, encourages and challenges them, and at the end even evaluates their exams with the Chamber of Industry and Commerce.
It’s very important to him to convey to the next generation how beautiful and creative the job as a chef can be and, above all, how much fun it is to conjure up delicious food on a plate.
